Total Passion Project- No Waste

Gem42 embraces sustainability by using a seasonal menu with zero waste, sourcing all ingredients locally from small producers, and growing their own vegetables in a kitchen garden.

They creatively preserve surplus produce and minimize leftovers. Simple eco-friendly choices like recycled menus and linen napkins support their green ethos. Their in-house lab explores new ways to reduce waste and improve energy efficiency.

Pasta di Pane?

The Waste and Resources Action Programme (WRAP) reports that bread is one of the most wasted food items in the UK, with approximately 900,000 tonnes wasted each year at both the production and consumer levels. In response to this issue, we have developed an innovative recipe for pasta made from old waste bread, which we have named Pasta di Pane.

Pasta di Pane offers even more  advantages: it contains fewer carbohydrates, more protein, and less fat than traditional pasta. We are continually refining our recipe to make the production process more sustainable, such as incorporating surplus food products like juice from fruits and vegetables instead of eggs.

In the Gem42 Test Kitcken, works alongside our greenhouse team, they have recently researched on wasabi and and finger lime, its gastronomic use and health benefits and how is produced, now the greenhouse team has its own plants.
